Herbal Flower Cookies

I baked some cookies for our annual school open house and they turned out so good, I wanted to share the recipe! This gluten-free recipe combines three aromatic flowers that made my kitchen smell amazing. They taste delicious, with a hint of tartness. For an extra decadent treat, Herbal Flower Cookies can be frosted with Lavender Frosting.

Herbal Flower Cookies Recipe

Ingredients:

  • ¾ cups brown rice flour

  • ¾ cups tapioca starch

  • ¾ cup cornstarch

  • ½ cup potato starch

  • 1 teaspoon salt

  • 1 cup sugar

  • 1 cup coconut oil

  • 1 egg

  • 2 teaspoons vanilla

  • ¼ cup tapioca starch (for kneading)

  • 1 ounce dried herbal flowers. I used equal parts lavender, hibiscus, and rose petals

You Will Need:

  • Smaller and larger bowls

  • Measuring cups and spoons

  • Coffee grinder or blender

  • Mixer

  • Rolling pin

  • Plastic wrap

  • 2 ungreased cookie sheets

Directions:

  1. Preheat the oven to 350°

  2. Powder the flowers in a blender or coffee grinder.

  3. In the smaller bowl, whisk together the flours, baking powder, xanthan gum, salt, and flowers. Set aside.

  4. In the larger bowl, cream the sugar and coconut oil. I just warmed my coconut oil to have it mix in easier.

  5. Beat in the egg and vanilla.

  6. Knead in enough of the tapioca starch to make the dough easy to roll out.

  7. Put plastic wrap over the ball and roll it out to about 1/8 inch thick.

  8. Cut into desired shapes with cookie cutters or the rim of a glass.

  9. Bake for approximately 13 minutes, let cool before taking them off the cookie sheet.

Lavender Frosting Recipe

Ingredients:

  • ½ cup butter or butter substitute

  • 2 cups confectioners sugar

  • 3 drops lavender essential oil

  • 2 teaspoons lavender hydrosol

  • 1/2 teaspoon vanilla

  • 1 pinch salt

Directions:

  1. Place the butter or butter substitute in a bowl and whip with the mixer on medium speed until creamy.

  2. Slowly add the confectioner’s sugar and continue mixing for 3 minutes or until light and fluffy.

  3. Beat in the vanilla, lavender hydrosol, and lavender essential oil. Mix well, stopping to scrape the sides on the bowl.

  4. Frost cookies, sprinkling a few lavender flowers on top if you wish.

  5. Enjoy!
